Americans used more and more sugar in the 19th century. Their favorite was imported sugar made from sugar cane. White sugar was expensive so people usually bought cheaper brown sugar for everyday use. White (loaf) sugar came in hard cones wrapped in blue paper. Because it was not ground up, people used sugar nippers to cut off pieces and pounded the sugar. West Indies sugar was among the most popular things bought at Orlando Ware's store in Deerfield, Massachusetts.
